Rabbit Hole Dareringer

This Rabbit Hole offering and I have a bit of history.  How far back do we go?

Well, come stand a little bit closer

Dareringer is Rabbit Hole’s bourbon mash bill finished in PX Sherry Casks. This bourbon is dark and red in color.  As it swirls in the glass it clings to the sides a bit “leggy” if you will.  On the nose I find it to be very soft in the way of heat and very pronounced in the way of sweet. A nose of stone fruit, cherry, maybe a little apricot. The palate leans way harder into the cherry. Sweet like a chic-a-cherry cola. The finish takes a bit of a sharp turn to medicinal cherry and a hint of oak.

This is my third bottle in roughly 3 years and while my opinion of the whiskey and its purpose in my bar has changed in that time, the product has been incredibly consistent. I first picked this up when I was just getting interested in finished whiskeys, a time when I was more drawn toward the sweeter end of the whiskey spectrum. But, as I’ve gone further into my whiskey journey, I find that sweetness is a slippery slope. When I first came upon this bottle I couldn’t get enough and I finished it rather quickly. It now serves a purpose as a one off pour to shock my palate in between pours as a refreshing mix-up. It also pairs well with Savage Garden and I enjoy it as a pleasant, sweet nightcap.
